The month of November is where the beauty of fall is among us - apple picking, brisk evening walks and autumn foliage are comfortable reminders of the emerging season. Here at Neros, it is time to pay thanks and a time for giving while enjoying food and life as it was meant to be - in the company of friends and family. I love creating unique dishes using late harvest ingredients like squash, pumpkin and delicious golden beets. Indulge in some of the flavoursome offerings as we serve up some new menu items and prepare for the upcoming holiday season.

Recipe of the month
Maple Glazed Bacon Wrapped Butternut Squash
By Deron Lepore, Chef, Neros Steakhouse
||pure maple syrup
||leaves of fresh sage chopped
||red or green jalapeno pepper seeds removed chopped
||bacon cut in half slices
For the glaze,
- In a small sauce pot, combine Maple Syrup chopped sage leaves and jalapeno pepper. Bring ingredients to a boil then reduce to a simmer for 5 minutes.
- Remove from heat and allow to cool to room temperature.
- Preheat oven to 425°F. Peel the seedless end of the squash, cut lengthwise into 4 inch sticks. Wrap each piece of squash tightly with bacon. Using a brush, coat the squash and bacon with the glaze.
- Place on a wire rack on a sheet pan and roast in the oven for 15 minutes. At the halfway point, brush some more glaze on the squash and roast the rest of the way or until the bacon is cooked.
- Season with salt and pepper prior to serving.
